Recipe Experiment

So, I got a new, absolutely amazing cookbook for Christmas and it has re-inspired me to once again cook delicious, hot and hearty meals for my family.  Our family eats our main meal at around noon due to Dustin's work schedule and then the kids and I usually have something simpler for our dinner (mac n cheese, hot dogs, frozen pizza, cereal, etc.) I DO NOT cook these kind of meals twice a day--I am inspired, not crazy!  As I said, this new cookbook is the source for my inspiration, but not the source for all of my recipes.  I have pulled out some really great tried and true recipes and some old cookbooks to dust off and look through again.  In case you are wondering, the name of this amazing cookbook is "Coming Home with Gooseberry Patch"--trust me, it is seriously a good cookbook!
Now, all of you who know me well, know that I have one recipe that I am especially proud of, and up to this moment have held onto pretty tight.  That's right--my White Chicken Lasagna recipe--given to me by my mom.  I have no idea where this recipe originated at--only that it is absolutely delicious.  Perfect for any season, any family, any occassion, any time.  I actually can't believe that I am going to share it with you all, but her it goes.....I hope you and your family enjoy it as much as we do. (By the way, this is what we had for dinner on Sunday)
White Chicken Lasagna
1 lb. chicken (cooked and cut up)
1/4 C butter
1/4 C flour
1/4 tsp. salt
dash of pepper
dash of nutmeg
4 C milk
12 oz. cream cheese (softened and cut up)
pkg lasagna noodles (regular...NOT the no boil kind)
2 C shredded mozzarella cheese
1 C parmesan cheese

Melt the butter in a large pan.  Add flour, salt, pepper and nutmeg and stir with a whisk until smooth.  Pour in milk a little at a time--stirring with a whisk to avoid lumps.  Cook over medium heat until heated through and slightly thickened (it will still be a pretty thin sauce).  Reserve 1/2 C of the white sauce.  Add cream cheese and stir with whisk until the sauce is smooth again.  Add chicken.  Grease the bottom of a 9 x 13 casserole pan.  Spread with reserved white sauce.  Layer with uncooked noodles, 1/2 creamy chicken sauce, 1/2 mozzarella cheese, 1/2 parmesan cheese.  Repeat--end with mozzarella and parmesan cheeses.  Cover with aluminum foil and bake at 350 degrees for 50 minutes.  Uncover and bake another 5-10 min (until golden)  Remove from oven and let sit 10 min--Enjoy!!
